Unlike industrial products, our recipe does not use artificial flavors: the citrus essence is captured directly during the simultaneous pressing of fresh olives and whole mandarins.

The result is an explosion of scents that tells the story of Sicily’s biodiversity.

Territory and Tradition

The raw materials are born in a unique geographical context: the slopes of Mount Etna and the Alcantara and Simeto valleys.

Here, at an altitude between 400 and 900 meters above sea level, the plants take root in volcanic, medium-textured soil, rich in minerals that give the product an unmistakable organoleptic signature.

The Art of Production

The Blend: We carefully select a variety of olives including Nocellara Etnea, Biancolilla, Moresca, Nostrale, Carolea, and Catanese, creating a perfect balance between body and delicacy.

The Harvest: Performed manually or with the help of mechanical harvesters during the advanced ripening stage, a precise choice to obtain a smoother and more harmonious oil.

Excellence in Processing: Olives and mandarins are milled within 24 hours of harvest in a continuous three-phase system.

The oil is then left to decant naturally in stainless steel silos under nitrogen, maintaining a constant temperature between 12°C and 18°C to preserve every vitamin and polyphenol.

Purity: With a very low acidity (0.25 – 0.45), the product features an elegant dark straw yellow color with green reflections.
